You can edit any notes that you've added to your FormSketch map, by first selecting the Arrow tool and then selecting the note. It will appear with a box around it, and you can use that to adjust the placement and angle that the note is at on the map, as well as moving the note elsewhere on the map by dragging the note around.
To edit the text on a note, tap / click on the note again and a typing cursor will appear where the text is so that you can update / edit the text.
You can also edit the colour of the note while it is selected, by going to the note tools at the bottom of the page, and selecting the colour option. The note will change to the new selected colour.
